Simple Greek Pasta Salad

This is turning out to be the summer of quick and easy salads.  I'll admit it, I rarely make pasta salad the same way twice, but this recipe has such an awesome cheat that I'll be making variations of it over and over.




This Greek-inspired salad literally can be ready in the time it takes to cook the pasta.  The dressing almost makes itself thanks to Apetina Feta.  This feta is already cubed and packed in oil with herbs & spices.

Greek Pasta Salad

2 cups cooked pasta, rinsed under cold water (I used penne)
1 tbsp balsamic vinegar
1/2 of an English cucumber, diced, peeled or not
2 tbsp minced red onion
2 tbsp sundried tomatoes packed in oil, thinly sliced
1/4 cup Kalamata olives
Sea salt & black pepper to taste




Mix together and enjoy!  Like most pasta salads, it's best if you can give it a bit of time in the fridge for the flavours to blend together, but if you are in a hurry... eat up.
