Waffling on Waffles

I realized when I was making waffles last Sunday that it was the first time I had used the waffle maker since we moved into our house.  We moved in September 2009.  That being said, to say I make waffles from time to time is a bit of an overstatement.  Since I  bought the waffle maker, I have used the same recipe which is the one I want to share with you.  Maybe that is part of the problem... they taste good and all, but maybe they just aren't the right waffles for me since I just can't be motivated enough to make them.  I also don't like the fact that I can only make two waffles at a time in my waffle maker, I'm hungry in the morning and not a fan of waiting to eat, especially when it's sitting right in front of me :)




Everyday Waffles
Adapted from Food.com

1 can (1 2/3 cups) evaporated milk (I used 2%)
2 eggs
1/3 cup vegetable/canola oil
2 tsp vanilla
2 tbsp sugar
1/2 tsp salt
1 tbsp baking powder
2 cups all-purpose flour

In a large mixing bowl whisk the eggs, then add the milk, oil, vanilla, salt and sugar and continue whisking.  Add the baking powder and flour and mix with a large spoon until combined but do not overmix.  Cook according to your waffle makers instructions.  I got 12 small square waffles from this recipe and any leftovers can be refrigerated and then toasted.  Serve with butter and Nova Scotia maple syrup.

Variation:
When you first put the batter in the waffle iron (I always spray mine with non-stick spray between batches) you can sprinkle with blueberries or chocolate chips.

  1. Hello! I am on the west coast. I just discovered your blogs and like your recipes. I think we have the same kind of taste budds, lol.
    We love waffles. The trick is to seperate the whites and yellow part of your eggs if you want more volume/puffy. We are in blueberry season here and I mix in blueberries. Evaporated milk? That is strange to me.

  2. Yeah, I know :s These ones actually taste like the eggs have been separated, they almost taste angel food cake-like if that makes any sense. Our local blueberries are just coming out here and the ones I actually had with these waffles were from BC :)

  4. Waffles are a rare treat for my family as well, I think partly because they tend to be a little messy to make. I really enjoy the ones that are sold at the Halifax Farmers Market though...served with strawberry preserves and dusted with icing sugar. Yummm :)

  5. My wife once bought me a waffle iron for Christmas, the true gift has been all the waffles she has made since then, and she has explored many a type. She just made some with nutmeg and cinnamon. I will try to get some recipes from her later
